Latin Name: Grifola frondosa S.F. Gray
Common Names: Maitake in Japanese, which means ¡°dancing mushroom¡±; Hen of the Woods; Sheep¡¯s Head; Boletus frondosus, Polyporus frondosus.
Description: Small overlapping tongue- or fan-shaped caps with stalks that are often fused together occurring in masses at the base of stumps and on roots. Maitake often reaches 20 inches in diameter at the base and a single cluster can weigh as much as 100 pounds. Maitake is a mushroom highly regarded in Japan for its medicinal and culinary properties. In Japanese herbology, it is recommended to strengthen the body and improve overall health. Maitake fruiting bodies contain acid insoluble, alkali soluble, and hot water extractable D-fraction, which is a primary polysaccharide and a highly standardized and purified 3-branched beta-1,6 glucan, bound to a protein in the ratio of 70:30.
D-fraction has the unique polysaccharide structure and the degree of branching is greater than any beta-glucan found in any other medicinal mushrooms that demonstrate similar immune stimulatory properties. Researchers theorize that the complexity of branching makes Maitake superior to other medicinal mushrooms in immune stimulatory effect. One of the difficulties with many of the medicinal mushrooms is that they lose much of their effectiveness when taken orally. An essential point about the D-fraction is that current research indicates it is most effective when consumed orally.
